Ingredients
  

  • 7 medium sized potatoes peeled and cut into 1-inch chunks
  • ¼ cup chopped onion
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Place the potatoes and onion into a large stock pot and add enough water to cover the potatoes.
  • Bring to a boil.
  • Lower the heat. Stirring frequently, simmer the potatoes until they are soft, and start to fall apart.
  • Remove the pot from the heat, and stir until the potatoes start to break apart.
  • Add in the butter, salt, and pepper, and stir until combined.
  • Serve warm.
