- 7 medium sized potatoes peeled and cut into 1-inch chunks
- ¼ cup chopped onion
- 4 tablespoons unsalted butter
- 1 teaspoon salt
- ¼ teaspoon black pepper
Place the potatoes and onion into a large stock pot and add enough water to cover the potatoes.
Bring to a boil.
Lower the heat. Stirring frequently, simmer the potatoes until they are soft, and start to fall apart.
Remove the pot from the heat, and stir until the potatoes start to break apart.
Add in the butter, salt, and pepper, and stir until combined.
Serve warm.
